The longer answer is about Monday. Eleven of the twenty are closed on Monday — only nine are open. Thursday to Saturday all twenty are open, on Sunday eleven. It is the reverse of Odense, where Sunday is the weak day; in Aarhus it is the first day of the week.

Frederiks Allé 105. No menu card: the kitchen decides, and you eat what came in. Fermentation and grilling over embers, natural wine and a loud room. Organic, with vegetarian dishes on the card.
Tuesday to Saturday 17.00-24.00 — five days, and with two others, and dinner only. The hours are an estimate.
2. Pondus, Åboulevarden
Åboulevarden 51. Natural wine and small, precise plates off the board, informal throughout. Bib Gourmand in the Michelin guide — a recommendation without a star, and that kind this guide is not too proud for.
Monday to Saturday from five. Closed Sunday.
3. Det Glade Vanvid, Aarhus Ø
Auktionskajen 18. The kitchen on the harbour, with cooking and dining room in the same space and one menu that changes continuously. Few tables.
Tuesday to Saturday from 18.30 — until half past nine Tuesday and Wednesday, until half past ten Thursday to Saturday.
4. Nordisk Spisehus, Frederiksbjerg
M.P. Bruuns Gade 31. Menus inspired by international models, with warm, unceremonious service and a good relationship between price and quality. Vegetarian dishes on the card.
Tuesday to Saturday, dinner only. The hours are an estimate.
5. Norr, Marselisborg Havn
Marselisborg Havnevej 46D. Nordic cooking without ceremony, and the same kitchen all day — lunch and dinner in the same register, which is rare at this level.
Open all seven days, half past eleven to eleven. One of only seven places on the list open the whole week.
6. Restaurant Komfur, Midtbyen
Guldsmedgade 40. Classic French evening cooking, and one of the few places in Aarhus where you can eat late — open until midnight, all seven days.

7. L'Estragon, Klostergade
Klostergade 6B. Organic the whole way through, and the vegetables carry the menu rather than accompany it. Vegetarian dishes on the card.
Tuesday to Sunday, dinner only, from six until late. Closed Monday.
8. Restaurant ET, Indre By
Mindegade 8. A French brasserie with a long wine list and good advice to go with it. Classic dishes done properly, a lively room — book at the weekend.
Open until one in the morning on Friday and Saturday, the latest on the list along with two others. Lunch Wednesday to Saturday, dinner every day except Sunday.
9. Manda Eatery, Jægergårdsgade
Jægergårdsgade 57. A green kitchen with baking in house, from breakfast to cake without a break. No table bookings.
One of only two places on the list without evening service — it closes at five on weekdays and four at the weekend. Closed Monday.
10. Europa Mad & Vinbar, Havnegade
Havnegade 28. Smørrebrød with the wine chosen to match, on a short card with few tables. The city's best smørrebrød table.
Tuesday to Saturday from midday. Closed Sunday and Monday.
11. Forlæns og Baglæns, Frederiksbjerg
Jægergårdsgade 23. Spanish tapas and wine from midday until late. Past midnight on Friday and Saturday — one of the three latest on the list.
Tuesday to Saturday. Closed Sunday and Monday.
12. Pinden, Skolegade
Skolegade 29. Classic Danish lunch — stjerneskud, pickled herring and snaps — in a room that has not changed, and that is the point.
Tuesday to Saturday, twelve to eleven. Closed Sunday and Monday.
13. Klassisk Bistro 65, Frederiksbjerg
Jægergårdsgade 65. French country cooking with tartare cut by hand and steak flambéed at the table, and a wine bar in the same room.
Open all seven days from five to midnight. The hours are an estimate — the house writes only "17.00 – late".
14. Mleko Bar, Vester Allé
Vester Allé 18. Polish cooking with fermentation at the centre — pierogi and a wine list chosen to match.
Wednesday to Saturday, the shortest week on the list along with Thors Mølle — four days each, where no other of the twenty has fewer than five. Closed Sunday, Monday and Tuesday.
15. Havrum, Egå Marina
Egå Havvej 31. Fish with a view of the marina, north of the city. Weekend breakfast from nine, and open all seven days until nine in the evening.
On weekdays it does not open until eleven, so Monday to Friday it is a lunch and dinner place.
16. Juliette, Frederiksbjerg
Jægergårdsgade 54. A French brasserie used practically — open from ten every day until half past nine in the evening, which makes it one of the most useful addresses in the city.
Seats outside in summer. One of the seven open the whole week.
17. Thors Mølle, Marselisborg
Thorsmøllevej 15. Lunch in an old watermill in the Marselisborg woods — as much an outing as a meal.
Thursday to Sunday only, twelve to four. That is the shortest week on the list and the second of only two places without evening service.
18. Gaijin Ramen, Nørregade
Nørregade 16. Ramen on its own broth, and the only place on the list with vegan dishes marked on the card. No booking — queue or come early.
Tuesday to Sunday, twelve to nine. Closed Monday.
19. Teater Bodega, Skolegade
Skolegade 7. The theatre's own bodega since the 1950s, with actors' portraits on the walls. Lunch, dinner and the last beer of the evening — the bar closes after the kitchen.

20. Grappa, Åboulevarden
Åboulevarden 60. Italian by the river with seats facing the water — pasta, pizza and wine from morning coffee to late dinner.
Open from ten to midnight every day, and until one on Friday. The most flexible address on the list.
Monday is the city's weak day
It is the most useful practical fact in this guide, and it is the opposite of Odense, where Sunday is the problem.

The eleven closed on Monday are Hærværk, Nordisk Spisehus, Det Glade Vanvid, L'Estragon, Manda Eatery, Europa Mad & Vinbar, Forlæns og Baglæns, Pinden, Mleko Bar, Gaijin Ramen and Thors Mølle — that is three of the top four.
The nine open on Monday are Pondus, Norr, Restaurant Komfur, Restaurant ET, Klassisk Bistro 65, Havrum, Juliette, Teater Bodega and Grappa.

Lunch, dinner or both
Seven are dinner only: Hærværk, Nordisk Spisehus, Pondus, Det Glade Vanvid, L'Estragon, Restaurant Komfur and Klassisk Bistro 65. Those are the seven most ambitious tables on the list, and they all open between five and half past six.
Two are lunch only: Manda Eatery on Jægergårdsgade and Thors Mølle in the woods. Both close between four and five.
The other eleven do both, though not always every day — Restaurant ET serves lunch Wednesday to Saturday, and Europa Mad & Vinbar is shorter on Tuesday than the rest of the week.
How late you can eat
Aarhus closes earlier than Copenhagen, and that is worth knowing in advance.
Three places are open until one: Restaurant ET on Mindegade and Forlæns og Baglæns on Jægergårdsgade, both Friday and Saturday, and Grappa on Åboulevarden on Friday. Restaurant Komfur and Teater Bodega close at midnight — Komfur all seven days, which makes it the only late address on a weekday.
The rest close between four in the afternoon and eleven at night.
The prices sit narrow
Aarhus has no restaurants at either the lowest or the highest price level on our scale. Eleven sit at level 3 and nine at level 2 — and that is the whole range.
It is a clear difference from Odense, which has both a place at level 1 and three at level 4, and from Copenhagen, where the range is wider still. The best tables in Aarhus are therefore not the city's most expensive to the same degree as elsewhere.

The neighbourhoods
Frederiksbjerg is the city's densest restaurant quarter with five of the twenty: Hærværk on Frederiks Allé, Nordisk Spisehus on M.P. Bruuns Gade, and Forlæns og Baglæns, Juliette and Klassisk Bistro 65 on Jægergårdsgade. The whole quarter is in the guide to Frederiksbjerg.
Åboulevarden has two — Pondus and Grappa — and the whole stretch along the river has its own page in the guide to Åboulevarden. Skolegade has two: Pinden and Teater Bodega, both classics.
The other eleven sit one apiece, and three of them are worth the trip for exactly that reason: Det Glade Vanvid on Aarhus Ø, Norr on Marselisborg Havn, Havrum by Egå Marina and Thors Mølle inside the Marselisborg woods.
Diet and allergies
Five of the twenty mark vegetarian dishes on the card: Hærværk, Nordisk Spisehus, Gaijin Ramen, Manda Eatery and L'Estragon. Gaijin Ramen on Nørregade is the only one with vegan marked.
