Mleko Bar cooks Polish food in a form that is neither nostalgic nor museum-like: pierogi, pickles, fermentation and a wine list that fits. It is one of the clearest new voices in Aarhus.

The kitchen works with Eastern European techniques — pickling, fermenting, lactic acid — and pairs them with Nordic produce. Pierogi is the way in, but the card is broader than that.

Open Wednesday and Thursday from five to ten, Friday from five to eleven and Saturday from twelve to eleven. Closed Sunday, Monday and Tuesday. Tables are booked for an hour and a quarter, and without a booking there are standing places at the bar.

It suits a dinner where you want to eat something you have not tried, and two people who want to share several small dishes. Vester Allé is close to the concert hall and the town hall.
