Pondus is where the chefs of Aarhus eat after service: a blackboard of small plates, a list of natural wine and a mood that never turns solemn. It is the younger sibling of the starred restaurant Substans and holds a Bib Gourmand in the Michelin guide.
The dishes are simple and precise — cured fish, something grilled, a cheese. Ask the staff to choose the wine; that is where the house shows what it can do. You can book a table, and the last seating is at half past eight.
Open Monday to Saturday from five to eleven. Closed on Sunday. There are sister restaurants in Skanderborg and on Aarhus Ø.
It suits an evening where you want to eat well without changing clothes, and two people who want to share several small plates. Åboulevarden runs through the middle of town, with seats by the river in summer.
