Richard Hart's bakery in Frederiksberg — sourdough in the lead role.

Richard Hart baked the bread at Noma before opening his own place. Hart is high-ceilinged with the bakery visible behind glass, so you can watch the dough being turned while you wait, and the bread is still the reason to come: dark, sour sourdough that keeps for days.

The laminated pastries and cinnamon buns are among the best in the city, and there is coffee and simple lunch dishes for anyone staying. By the afternoon the shelves are thinner, but the bread usually holds.

Open from half past seven to six on weekdays, and from eight to five at weekends. Gammel Kongevej is a few minutes from both Frederiksberg and Vesterbro.

It suits a Saturday morning with children — there is room, and seats outside — and anyone who wants a whole loaf to take home. Come before eleven if you want one of the laminated pastries.
