Kinyōbi is not a sushi restaurant that has acquired a sound system. It is a Japanese listening bar that also makes excellent sushi, and the order explains the rest: a vinyl DJ, a purpose-built hi-fi rig and a bar that runs until two at the weekend.

Alongside the sushi and sashimi there is a charcoal grill with Iberico presa, wagyu A3 and yellowtail collar. The House Nigiri Selection costs 230 kroner, the sashimi selection 235, and the Kinyōbi Omakase 650 per person. Single pieces of toro are 115 kroner each, grilled edamame 45, and a 200-gram Spanish sirloin 395.

Read the door policy before you head over. The place states itself that a reservation does not in itself grant entry, and that it weighs attitude, dress and previous visits. That is not a phrase you usually find at a pizzeria.

There is no lunch service. The first sitting is at five.
